THE INDIAN BUTTERNUT SQUASH CURRY
We often find it really hard to keep track of how balanced our diet is due to the busy lifestyle that we all are accustomed to. There is a preconceived opinion about healthy food being boring and tasteless, However, its important to inculcate healthy eating habits for good immunity and prolonged life. What if we are able to cook food that is healthy and yet so delicious. So here is a recipe that is very nutritious as well as extremely tasty.
Indian butternut squash curry is a low-fat vegetarian curry that provides our body 12grams of fiber,20grams of protein,40 grams of carb,6 grams of fat, and 5 grams of sugar per serving. It can be cooked under 50 minutes.
The ingredients required are: 200 grams basmati rice,1 tbsp olive oil,1butternut squash sliced,1 red onion diced,2 tbsp mild curry paste,300ml vegetable stock,4 large tomatoes roughly chopped,
400g can chickpeas rinsed and drained,3 tbsp fat-free Greek yogurt, a small amount of coriander
First, the rice has to be cooked in the boiling salted water meanwhile the oil has to be heated in a pan and the butternut squash has to be cooked for 2-3 minutes until it is turned brown in addition onions and curry paste has to be added and fried for 3-4 minutes. Now this stock has to be poured into another utensil and has to be simmered and covered with a lid for 15-20 minutes until the squash becomes tender. Later tomatoes and chickpeas have to be added, then it should be cooked it for 3-4 minutes till the tomatoes slightly soften.finally the flame has to be turned off, the curry should be allowed to cool down, yogurt and coriander have to be added. It can be served with rice or Indian bread.
