Food is one of the many things in the world that is ever so
changing. People’s tastes are evolving, their will to try out new foods outside
their comfort zones and venturing into new cuisines is increasing day by day. Some
of these changes become so prominent that a large number of people tend to
follow the herd. Here are some of the food trends that have seen to adopted on
a large scale by the masses.
Sustainability is something that everyone is tending to lean
towards. Zero Waste movement, employment for local community, chemical-free
foods are certain things that a large part of the population is rooting for.
From fair trade to proper
disposal of food waste to portion control for conscious consumption of food,
people are turning pro-earth and pro-community.
Pan-Indian menus have a huge rise in number. Dedicated restaurants for food from
all over the country — Karnataka, Bihar, Bengal, Kashmir, Goa, and more — have
sprung up. Restaurants have seen to be including various cuisines from all the
states of India to attract a wider range of customers and satisfy their tastes.
Citrus deserts have been gaining widespread popularity. Sour
flavours have been incorporated in mainstream foods. Other than lemons and
oranges, pomegranate, rhubarb, and tamarind are increasingly becoming the
popular ingredients to be used across dishes.
Plastic cutlery is nearing the stage of complete elimination
from F&B establishments. Even packaging for takeaways and delivery modes
turned towards more green options such as recycled paper over plastic
containers.
Indian chefs have turned their eye to indigenous ingredients.
Backed with the knowledge that eating what’s grown where you live proves best
for you, not to forget the freshness that comes with local produce, the
spotlight is on Indian foods.
Chefs and restaurants had taken to prepare everything
themselves from scratch. So whether it is the bread basket, crisps, salsa or
mayo or the plum gel accompanying duck strips, everything is prepared ‘In House’.
